Fluffy Soufflé Pancakes

Method: Pan-Fry & Steaming
Ingredients:
(Makes 6 Pancakes)
2 eggs
1 tablespoon of milk
4 ½ teaspoon all purpose flour
½ teaspoon of baking powder
1 teaspoon of vanilla extract
1⅔ tablespoon of sugar
Little bit of butter / olive oil
Preparation:
Separate the egg yolks and whites.
In a big bowl, stir the egg yolk well. Add in the milk & vanilla extract. Mix well.
Sieve the flour and baking powder into the mixture., Mix it evening using a whisk.
Whisk the egg white and add in sugar slowly until stiff peaks form.
Mix the egg white together with the other egg yolk mixture. Mix well.
Heat a nonstick pan over medium-low heat; lightly brush with butter/olive oil.
Cook one side on low heat for 3 minutes, add water and wait 1 minute. Cover with a lid.
Flip the pancakes and add water, cook for 3-4 minutes.
Serve with honey, blueberries, strawberries or any of your choice.
